Delicious Entrees Featured at BV
Brethren Village's newest dining venues, Chive's American Grill and Perkissimo Café- located in the renovated Fieldcrest residential building- have been creating quite a stir on the plates of Residents and guests! Opened in November, both locations feature the skilled culinary talents of Hilary Mace, Chef & Manager for Fieldcrest Dining.
Trained at the Institute of Culinary Education in New York City, Mace came to the Village in October of 2008 with more than six years experience in high-end restaurant dining including her work at exclusive locations in Manhattan and Vermont. As a former Sous Chef trained to use regional foods, Mace prides herself on creating dishes made with locally raised meats and produce.
"I try to buy as locally as possible. This area is rich in fresh foods, which is key to preparing a great meal. Residents can see and taste the freshness of the ingredients we use in our dishes," stated Mace.
From butchering her own meat to rolling her own pasta, Mace has incorporated the hand-made touch to all her dishes prepared for diners of the Village. Understanding the Village clientele, Mace includes Lancaster County favorites on the menu, but also features innovative dishes and sides including coconut-crusted tilapia, agnolotti (butternut squash raviolis) and seared mahi-mahi.
Reflecting on the newly renovated space, Mace commented, "It's enjoyable to prepare and deliver quality dishes to Residents from the open-air kitchen. I take pride in seeing the smiles on their faces when they try a new dish or rediscover a common food."
From summer barbecues to extended hours, Mace is looking forward to the future of dining at Fieldcrest. With endless possibilities for menu development, Chives and Perkissimo will surely satisfy your appetite.
